Pot Chickpea Noodle Soup

quick and warm chickpea noodle soup easy to make and perfect to face winter and cold weather

olive oil

  • 1/2 onion

  • 1 clove garlic

  • 1 carrot

  • 2 stalks celery

  • 1 parsnip

  • 3 cups vegetable broth

  • parsley


Section 2: method


Directions should always be short and to the point.

Dice the onion, garlic, carrot and celery. Peel and chop the parsnip.

  1. Heat oil in pot, add and sauté onions and garlic for 2 min.

  2. Add carrot, celery, parsnip, bay leaf, thyme, salt and pepper. Stir to combine, cover and cook for 5 min.

  3. Add broth and drained chickpeas and bring to boil.

  4. Add noodles and stir occasionally until pasta is cooked. Reduce heat to low and simmer for 20 min.

Taste and adjust seasoning. Add parsley and serve with bread. tell us what you think !!
